This Tuesday my dad is having dinner at our house for the first time. We moved into our new home only three months ago, and it has taken this long to get our A into G and haul over the parentals.
This delicious dessert is most complimented by a side of
coconut cream or Greek yoghurt. It is perfect during the colder winter months
as it has that cosy nourishing feel to it, especially when served straight from
the oven.
If you have a particular fancy for apples you can always add
another one to the batter.
Here goes dad....
Apple and Prune Cake
Cake:
1 ¼ cup almond flour
2 Tbsp coconut flour
2 tsp ginger ground
1 tsp cinnamon
½ tsp baking soda
¼ tsp salt
3 eggs
¼ cup coconut oil, melted
1 Tbsp honey
1 tsp vanilla essence
1 granny smith apple, diced
6 prunes, diced
Topping:
½ cup coconut thread
¼ cup almond flour
1 tsp cinnamon
2 Tbsp coconut oil
1 Tbsp honey
1/8 tsp salt
The almond flour, coconut flour, ginger ground, cinnamon,
baking soda, and the salt.
The eggs, coconut oil, honey, and vanilla essence.
Add the apple and prunes into bowl one and mix well.
Mix together the coconut thread, almond flour, cinnamon,
coconut oil, honey, and salt.
